Lemon Poppy Seed Trifle and Strawberry Sauce

INGREDIENTS
6 lemon poppy seed muffins, cut into 1 inch cubes 3 tbsp cream sherry 1 3.4 oz pkg lemon or vanilla pudding 1 1/2 cup milk 2 tbsp lemon zest 1/4 cup lemon juice 8 oz whipped cream 2 cup fresh or frozen strawberries 2 tbsp lemon juice 2 tbsp sugar |

DIRECTIONS |

Sprinkle muffins with sherry. In a food processor or blender, combine strawberries, lemon juice and sugar. Blend until smooth and sugar is mostly dissolved. Push through a sieve to eliminiate seeds, if desired. In a large mixing bowl, whisk together pudding, milk, lemon juice and zest until thick. Fold in whipped cream. To make individual trifles spoon 2 tablespoons strawberry puree in parfait cups or large wine glasses. Layer each glass with poppy seed muffin cubes, and top with 1/4 cup of pudding mixture, then repeat layers. Top trifles with more strawberry sauce and garnish with fresh strawberries, lemon zest or mint leaves. |
