INGREDIENTS
1 1/2 pounds very ripe peaches, peeled, pitted and chopped 1/2 cup peach-flavored schnapps 1/2 gallon vanilla ice cream, slightly softened Fresh raspberies and mint sprigs, or sliced peaches for garnish |

DIRECTIONS |

Stir together the chopped peaches and the schnapps in a mixing bowl. Let stand for 30 minutes. Line a 10-cup metal bowl with plastic wrap to use as a mold for your peach bombe. Make sure to let a bit of the plastic wrap hang over the sides for easy removal of the frozen dessert from the mold. (You may use a plastic bowl, but metal conducts the cold from the freezer better and is a bit easier to handle when removing your bombe from the bowl.) Gently blend together the softened ice cream and the peaches and schnapps mixture. Pack it into the prepared mold and tap it on the counter a few times when completely filled to remove any air pockets that may have formed. Cover with plastic wrap and freeze for at least 4 hours. Fifteen minutes before serving, remove the plastic covering from the top of the mold and invert mold onto a serving plate. Dampen a clean kitchen towel with warm water and place it over the bowl inverted onto the serving plate. The metal mold should be easily removed. Remove the plastic wrap. Garnish with a ring of bright red fresh raspberries and a few mint sprigs or a circle of fresh peach slices.
